Champagne Extra Brut Grand Cru 3A is a label of the French maison De Sousa , which is based in the heart of the denomination, precisely in Avize. The Chardonnay grapes used to produce 50% of the blend come from this enchanting village. The remaining half is made up of Pinot Noir grapes, coming from the two grand crus of Ay and Ambonnay, other top areas of Champagne. All the vineyards are cultivated in full respect of the local tradition. After a separate harvest by variety, the vinification is also characterized by different processes based on the grape variety. The Chardonnay grapes are fermented in barrels, while the Pinot Noir ones in concrete tanks. Both methods involve the exclusive use of indigenous yeasts. The refermentation in the bottle extends for 3 years on the lees. At the end of this period, disgorgement is carried out with the addition of a minimum percentage of Liqueur d'Expedition. Perfect immediately, Champagne Extra Brut Grand Cru 3A can evolve for over 5 years in the cellar.
