'Aurora' Carricante Etna DOC I Vigneri 2022

Aurora Carricante Etna DOC is a fragrant white wine produced by the Sicilian winery I Vigneri . To create this label, the company focuses on the vinification of Carricante grapes, with a small addition of Minnella grapes, equal to 10%. Both native vines are cultivated with the traditional sapling system which protects them from strong winds. The plots are located near Milo at 800 meters above sea level. Once the ideal degree of ripeness has been reached, only the best bunches pass the manual sorting. After the harvest, the vinification begins with the spontaneous fermentation on indigenous yeasts inside temperature-controlled steel tanks. The refinement lasts until the spring following the harvest and always takes place in steel tanks, which are ideal for preserving the varietal notes. Perfect as soon as it is bottled, Aurora Carricante Etna DOC can pleasantly surprise even after resting in the cellar for a couple of years.
