Barolo Chinato is a fortified wine produced in the Conterno Diego cellar in Monforte d'Alba. The company represents one of the most renowned realities in the Langhe area and produces bottles appreciated all over the world. The grapes come from the Nebbiolo vines, grown on soils exposed to the South-West rich in clay, sand and silt. The training system is Guyot. The manual harvest takes place in mid-October, followed by alcoholic fermentation and maceration in steel containers for 15 days. The refinement takes place in French oak barrels. The next phase is that of aromatization which is carried out by means of an infusion with 50 herbs, spices and flowers for 40 days. At the end, the wine is racked with the addition of sugar and alcohol before being put on the market, it needs to stay in the bottle for 12 months. Barolo Chinato is an intense and structured wine that is well suited for meditation at the end of a meal with an excellent pairing of chocolate.
