Description

The Castel del Monte Cabernet DOC wine is an excellent terroir red proposed by the prestigious Apulian company Cantine Carpentiere, a historical production reality of the Alta Murgia, which works the vineyard with the highest respect for the traditions of the territory. This interesting label comes from the single-variety vinification of Cabernet Sauvignon grapes, the fruit of vines grown in a karst area, 450 meters above sea level. Castel del Monte Cabernet DOC takes shape from a harvest done by hand in wooden baskets, during the first week of October. After harvesting, the bunches are transported to the cellar, where they rest in cold rooms before being pressed. This is followed by fermentation in steel on native yeasts. Subsequently, the wine ages for a year in Slavonian oak barrels, to then continue to refine in glass. The end result is an enveloping red, a full-bodied label with excellent persistence, for a velvety and aromatic wine.
