Description
Castelletto Barolo DOCG is a structured red wine from the historic Castello di Perno winery. It is the result of the single-variety vinification of Nebbiolo grapes. The label takes its name from the production sub-area located in the municipality of Monforte d'Alba, where the vines enjoy very favorable conditions. When they arrive in the cellar, the bunches are de-stemmed and subsequently pressed. Spontaneous fermentation does not include the addition of yeasts and coincides with maceration in contact with the skins. This phase lasts for over a month and involves careful control of temperatures. For ageing, the company prefers Austrian oak barrels, where the wine remains for a year and a half. Before bottling, a further passage is carried out inside concrete tanks, in order to seal the scents. Castelletto Barolo DOCG is a red capable of evolving over time in an extraordinary way, surprising even after 7-8 years of rest in the cellar.
