Description
Champagne Brut Tradition is produced by the French winery De Sousa , a reality that enhances the territory, based near Avize. It is obtained from a blend composed mainly of Chardonnay and Pinot Noir grapes, present in balanced percentages, with the addition of 10% of Pinot Meunier grapes. The plots are managed in line with the principles of the biodynamic philosophy. The vines are on average 45 years old and have their roots in a chalky substrate. Once the harvest is completed with manual sorting, the best bunches are transported to the cellar. The alcoholic fermentation involves the use of indigenous yeasts and takes place in wooden vats. Consistent with the Champenoise Method, the aging on the lees coincides with the refermentation in the bottle for about 30 months. During disgorgement, a small percentage of dosing liquid is added. Champagne Brut Tradition is perfect right away, but at the same time boasts the potential to evolve over a couple of years, if properly stored.
