The Champagne Extra Brut Reserve Blanc de Blancs Grand Cru
is an excellent product of the De Sousa
maison. In line with the Blanc de Blancs style, the label is obtained by exclusively vinifying Chardonnay grapes, a variety that expresses itself finely on these lands. The vineyards are included in the Grand Cru denomination of the Côte des Blancs and cultivated according to biodynamic principles, therefore with maximum naturalness. Among the rows, the work ends with a very careful manual harvest, which involves the selection of the best bunches. In the cellar, the vinification involves a first alcoholic fermentation, followed by the addition of a percentage of Riserva wine, according to the best champagne tradition. The refermentation in the bottle, which takes place in the traditional way, involves a three-year rest on the lees in the bottle.
