'Exilissi' Gewurztraminer Riserva Südtirol DOC Baron Di Pauli 2016

Exilissi Alto Adige DOC Gewürztraminer Riserva is an elegant and fragrant white wine produced by Baron Di Pauli . This productive reality is constantly committed to innovating the viticulture of the area, at the same time enhancing the typical varieties of the area. The Gewürztraminer grapes used to produce this wine are grown on vines over thirty years old. The vineyards are located in Höfl unter Stein, about five hundred meters above sea level: here they enjoy excellent exposure and a breezy climate. After a rigorous harvest, the vinification begins with a long maceration on the skins, thanks to which the grapes preserve many of their aromatic peculiarities. The refinement phase, which takes place inside wooden vats, lasts for about ten months and has the purpose of conferring softness. Exilissi Alto Adige DOC Gewürztraminer Riserva is an intense and structured wine, soft, elegant and very fragrant which can be left to further refine in the cellar for three or four years.
