Description
The Kaltersee Keil Alto Adige Doc Bio Manincor is an elegant and refined red wine, which expresses in every sip the purity and genuineness of the territory in which it is produced. The Manincor winery is one of the oldest wineries in Trentino Alto Adige. Founded in 1608 by Hieronymus Manincor, for decades it was involved only in the cultivation of vines, to then sell the harvest to the nearby cooperative wineries. Since the 1990s, however, it has begun to produce its own wines, always with the philosophy of organic and biodynamic agriculture, that is, always putting respect for nature and biodiversity at the centre. In this context, the Kaltersee Keil Alto Adige Doc Bio Manincor was born, obtained exclusively from Schiava grapes, an autochthonous vine of Alto Adige, cultivated according to the principles of organic farming. After harvesting, the grapes are left to ferment in wooden vats obtained from the forests near Manincor, to then begin a 5-month aging phase in oak barrels. The result is a refined, elegant and well-structured high-quality red wine. Ideal to consume immediately, but also excellent after a few years of aging.
