'Machaon' Pecorino Abruzzo DOC BIO Ausonia 2019

Machaon Pecorino Abruzzo DOC Bio is a white wine with a marked minerality, produced by the Ausonia winery, a company that interprets the peculiarities of the territory in a unique way. This label is obtained by vinifying exclusively grapes of the native Pecorino vine, very common in the area between Marche and Abruzzo. The white berried variety is grown on the company's hilly plots according to practices that protect the delicate balance of the ecosystem. Between the rows, the work of the staff is limited to the interventions necessary to allow the vines to produce healthy berries. Once the phase of rigorous manual harvesting is complete, only the best bunches are destemmed and left to ferment spontaneously in steel tanks. The wine is then placed to refine, always in steel tanks, which keep the aromas intact. Machaon Pecorino Abruzzo DOC Bio is excellent to be enjoyed shortly after bottling, when the varietal notes emerge strongly.
