The "Malvasja" of Castello di Rubbia has a marked minerality and a dry and clean sip. The grapes are harvested by hand and undergo a maceration of about twenty days in which the polyphenols of the aromatic vine give the wine the complexity and richness which we can then savor in the glass. The wine ages for 12-18 months "sur lie" (on the lees) and undergoes malolactic fermentation. An Istrian Malvasia different from the usual, with a strong timbre and a peculiar intensity. Very clear decisive, sure. A truly characterful wine.
