Description
Pairolero Barbera d'Alba DOC is a full-bodied red wine produced by the Piedmontese winery Sottimano . It is obtained from the exclusive vinification of grapes of the autochthonous Barbera variety, grown on the vineyards located in Basarin and San Cristoforo di Neive. In these areas, the vines enjoy particularly favorable conditions for their development. On the hilly soils facing west, the substrate has high percentages of clay and sand, two elements which give the grapes minerality and finesse. Once they have reached maturity, the healthiest bunches are selected during the manual harvest. In the cellar the alcoholic fermentation takes place in steel tanks with 25 days of maceration on the skins. Both the malolactic fermentation and the subsequent refinement take place in oak barriques, where the wine rests for at least one year before bottling. Pairolero Barbera d'Alba DOC boasts a good potential for evolution, giving pleasant sensations even after 4-5 years.
