As we know, the "Sanct Valentin" line represents the excellence of this prestigious cooperative winery, awarded every year. It is the result of a careful selection, in which only the best vineyards are chosen and, in particular, the older ones, capable of giving life to rich and concentrated bunches. The grapes, once harvested by hand, are cold macerated, fermenting alcoholicly in steel containers, also carrying out the malolactic fermentation. Then follows the refinement, carried out for 1 year in barrique, at the end of which the wine is ready to be bottled. In the mouth it is striking for its great refinement, which comes from a medium-bodied sip in which the tannins are finely integrated; ends with a long and persistent finish. A label with which the San Michele Appiano winery manages to perfectly dominate a difficult and demanding vine such as Pinot Noir, giving us a sip of excellent workmanship, as evidenced by the scores obtained both nationally and internationally.
