Amarone della Valpolicella Classico DOCG Ravazzol , an intense and fragrant red, comes from the experience of Ca' La Bionda , a reality that boasts a long history in the viticulture of the Veronese hills. Obtained from a blend of Corvina (60%), Corvinone (20%) and Rondinella (20%), this wine represents a perfect synthesis of the vines that achieve the best quality results in these areas. The company cultivates the vines on the Ravazzol hill, where the rows exploit a calcareous and clayey soil to obtain the maximum benefit. The grapes are selected before the harvest and left to dry on wooden tables for at least 4 months, before moving on to the alcoholic fermentation in steel and the malolactic fermentation in wood. The refinement takes place in large oak barrels for a period of 3 years and continues in the bottle for another 8 months. Given the high alcohol content and the complex structure, it is advisable to let Amarone della Valpolicella Classico DOCG Ravazzol rest for up to a maximum of 7 years and let it breathe before tasting it, to grasp all its nuances.
