Description
Ribolla Gialla Venezia Giulia IGT is an elegant white wine produced by the Gorizia winery Damijan Podversic . The label is obtained from the single-variety vinification of Ribolla Gialla grapes, a variety that expresses itself sublimely on karst soils. The plots are cultivated following the principles of biodynamic agriculture, in full harmony with the rhythms of nature. Once ripe, the grapes are harvested by hand. The long alcoholic fermentation, with maceration on the skins, takes place in oak vats for a period of time between 60 and 90 days. This phase does not include the addition of selected yeasts and takes place at a rigorously monitored temperature. For the refinement, the company uses 20 and 30 hectolitre oak barrels, where the wine remains for about 3 years and then rests for another year in the bottle. Ribolla Gialla Venezia Giulia IGT is a white capable of giving great satisfaction to those who know how to wait even more than 5 years.
