'Ripassa' Valpolicella Ripasso DOC Superiore Zenato 2019

Ripassa Valpolicella Ripasso DOC Superiore is a full-bodied red wine from the Veronese winery Zenato . It is the fruit of a blend that largely includes Corvina grapes, with small percentages of Rondinella and Corvinone. The three local varieties are cultivated with the Guyot system at about 300 meters above sea level. On calcareous soils, the vines enjoy favorable conditions for the production of grapes that stand out for their finesse and ripen on average in the first ten days of October. After the manual harvest and the alcoholic fermentation, a selection of the wine is passed over on the Amarone pomace, increasing the alcohol content and acquiring very complex aromas. The refinement in French oak tonneaux lasting about a year and a half is followed by a further rest of 6 months after bottling. By virtue of its important structure, Ripassa Valpolicella Ripasso DOC Superiore lends itself to long evolutions, even giving pleasant sensations after 5-6 years.
