This recent Donnafugata label (first vintage 2016) is part of the Impronte di Territorio Collection: surprising wines of great clarity. Carricante grapes are used, which is an ancient white grape variety, typical of the volcano area. For this reason it should come as no surprise that the altitude is particularly high, ranging from 730 to 750 m above sea level; we could easily talk about mountain wines! Deep, rich in minerals, the lava soil allows a strong expansion of the roots of the vine and an intense "feeding" to the plant. Manual harvest in crates with careful selection of the grapes in the vineyard. Fermentation in steel. Aging for 10 months partially in tanks and partially in French oak (second and third passage barriques) and then at least 9 months in bottle before being marketed. It is a wine that displays great elegance and complexity. Sul Vulcano 2017 shows refined notes of aromatic herbs, citrus fruits and flint. On the palate it is enveloping, fresh and sapid, characterized by marked minerality and persistence. Longevity over 5 years. Perfect with shellfish, vegetarian first courses and porcini mushrooms. Serve at 10-12 °C.
