Terre del Crifo Rosso Castel del Monte DOC is an excellent wine produced by the award-winning Apulian social winery Crifo . To make this label, Nero di Troia grapes are mainly vinified, to which small percentages of other native black grape varieties are added. The varieties are grown on the Murgia hills with the Apulian pergola system which amplifies the benefits of an environment that is already very suitable for viticulture. Towards the end of October, the grapes reach full maturity and are then carefully selected during the hand-picking. Once in the cellar, they are destemmed and carefully pressed. After the maceration, which lasts no longer than two days, the alcoholic fermentation takes place. The wine therefore undergoes malolactic fermentation and, following bottling, rests in the bottle for a few months. Terre del Crifo Rosso Castel del Monte DOC immediately surprises, but reserves pleasant sensations even after one or two years of evolution in the cellar.
