Description
Valdovato Roero DOCG is an intense red wine made by Cascina Fornace , a very popular winery in Roero. The vineyards where the Nebbiolo grapes are grown for the vinification alone are owned by the company and are located in the Santo Stefano Roero area. Here the practices follow the dictates of organic farming and the vines draw essential nutrients from the predominantly sandy soils. The steep slopes ensure optimal exposure of the bunches. After a harvest carried out in the traditional way, the vinification begins with a first spontaneous alcoholic fermentation on indigenous yeasts, followed by a long maceration on the skins. The refinement lasts for a minimum period of ten months inside large oak barrels at the second or third passage. Valdovato Roero DOCG is then bottled without fining. It is a wine with very delicate fruity notes; it is characteristic on the palate as it is dry, dry, tannic, with a good body, certainly harmonious. While boasting the potential to refine up to 5/10 years in the cellar, this wine can be enjoyed immediately with great satisfaction.
