The "capital" of the splendid Champagne region is undoubtedly Epernay, at the foot of the Montagne de Reims, and it is here, precisely in Mareuil-sur-Ay, a small village surrounded by vineyards, that the Maison Billecart-Salmon is based. Its history begins way back in 1818, when Nicolas Francois Billecart married Elisabeth Salmon, both descendants of ancient families of vignerons; with the marriage the two family farms merged and the Maison Billecart-Salmon was born, which from then on began its own production of Champagne.
The company is still managed today entirely by the same family, which for seven generations, faithful to the motto "finesse, equilibre et elegance", has dedicated itself with passion and competence to the production of extraordinary Champagnes. Today it owns 200 hectares of vineyards, divided into small plots distributed in the various villages in the area; it should be noted that only the most prestigious labels of the company, namely the vintages, are produced from the plots classified as "Grand Cru". A truly fascinating and particular aspect is represented by the proprietary cellars which have been dug into the chalky soil and characterized by constant humidity around at 80% and at a temperature between 11 and 12 degrees, conditions present in all seasons. They extend for about three kilometers with underground tunnels built in 1840. In these rooms, there are small 50 liter containers which allow fermentation separation of the musts, coming from the different vineyards, and large "Bourguignonnes pièces", of 135 litres, in which 40,000 liters of Champagne refine, waiting to be bottled. Combining the most ancient traditions with the most advanced oenological technologies, a range is thus born of labels classified according to the various sugar dosages, and divided between vintages and special cuvées. From Brut to Brut Réserve, through Extra Brut and Blanc de Blancs, there are Champagnes, those labeled "Billecart-Salmon", now famous and recognized internationally, a symbol of the most important and prestigious French bubbles. The “Rosé” undoubtedly stands out in the range, the most famous and representative Champagne of the maison, award-winning and considered one of the best rosé Champagnes on the market.
