Sforzato di Valtellina DOCG , also known locally as Sfursat , is an extremely prestigious wine, a true enological excellence. It is produced with dried Chiavennasca grapes (Nebbiolo in Valtellina), but which in the end give a dry, structured and tannic wine, and not sweet, as one might imagine. In past times, for the withering, mats or layers of straw were placed on the ground in special rooms. Today stackable reed trellises or small plateaux are used in dry and well-ventilated rooms, usually located on the top floor of the cellar to avoid humidity. Sforzato di Valtellina DOCG has a ruby red color with garnet reflections . The nose is intense and broad, with hints of ripe fruit, very complex spices. On the palate it has great softness, it is dry, structured and of character, with elegant hints of wood, extraordinary.
