Bruno Paillard is a winery that today extends over 32 hectares of vineyards, 12 of which are included in areas classified as Grand Crus, therefore the top of grape production in Champagne. The company is located in Reims, a town in the center of the Champagne region. The Paillards are a family that has been dealing with wine for several generations, so it was easier for Bruno, starting from the age of twenty, to build ever greater experience regarding the world of Champagne, especially at the beginning, as a purchasing broker -sale of grapes. However, Bruno had always cultivated a desire: to create a label with his own name, capable of standing out for its elegance and finesse. Determined to make this dream come true, Bruno sold his prestigious car, and with the first money he began to lay the foundations of the company. In the first years, Bruno produced his own labels by renting spaces in some cellars and purchasing grapes from farmers: the market at that time was at a standstill: the birth of a new maison had not been seen for almost a hundred years, but since Paillard's bottles immediately met with good success. In 1994 Bruno began purchasing the first vineyards, aiming for natural and sustainable viticulture. And so in just a few years we arrived at the current structure, with self-produced grapes such as Chardonnay, Pinot Noir and Pinot Meunier, and thus covering approximately half of the winery's production needs; the remaining part is purchased from local farmers, loyal over the course of the many harvests. Within the owned vineyards there is strict respect for the terroir, which is expressed through sustainable practices that aim to promote biodiversity, and do not involve the use of herbicides or pesticides. In the cellar, great attention is paid to every phase of winemaking, and it is during the months between January and Easter that we dedicate ourselves to the art of Cuvee, where the reserve wines of the maison, dating back to 1985, constitute the key to a unique personality. Today Bruno Paillard is a more than established production company that takes care of every detail in detail: in fact, each bottle clearly has the date of disgorging (degorgement) imprinted on it, which allows the customer to understand the "refinement" of that particular wine.
