    Trento DOC

    Few know that this splendid Denomination of Controlled Origin (DOC) was the first in Italy to be reserved exclusively for sparkling wine, obtained with the Classic method (or Champenoise). Its territory is very vast and includes almost the entire province of Trento. For more than 100 years, in this area of absolute excellence, excellent sparkling wines have been produced with the typical sparkling wine vines: Chardonnay , Pinot Blanc, Pinot Noir and Pinot Meunier. As we said, only the "classic method" of refermentation in the bottle is allowed in the elaboration of the Trento DOC sparkling wine. The elaboration process provides for a minimum period of permanence on the lees of 15 months, raised to 36 months for the "Riserva" type. A sparkling wine with a very strong territorial imprint, made up of a mix of altitude, calcareous soil, microclimate with strong temperature variations. A very recognizable and generally high quality product, with marked distinctive characteristics. The perlage is characterized by being persistent and fine; it expresses all the quality and elegance of this sparkling wine. On the nose, however, the aromas that characterize this product are essentially fruity and floral, followed by other fragrances such as vanilla, apricot, exotic fruit, toasted hazelnuts, fresh bread, etc. On the palate we find all the freshness and roundness typical of a Trentodoc and we can appreciate the perfect balance between acidity and softness.
