The connection between the stories of the Notari family and the famous Antinori dynasty is truly particular. In reality, it all began at the end of the Second World War, when Vannuccio Notari opened his bulk wine resale shop in the center of Florence. It was he who then passed on to his son Giancarlo the passion and curiosity for this world which soon came to fruition with his employment at the famous Cantine Antinori. This is the period in which Giancarlo Notari learned directly from Marquis Piero Antinori those secrets of the art of viticulture which have always made Tuscany the most noble and internationally known region for the production of wine. This great passion for wine was, in turn, transmitted by Giancarlo to his son Saverio who, having completed his studies in oenology in 1988, managed (nine years later), with the invaluable and indispensable help of his family and the Antinori family, to establish the Wine Company. It is a new reality whose objective is the production, but also the distribution of excellent wines. The strategy involves the creation of new brands and, in fact, in that same year, 1997, the Col de' Salici winery was born with the production of quality Prosecco as its sole and strategic objective. The choice is visionary and pioneering, as it must be taken into account that Prosecco in those years did not yet enjoy the enormous success it has achieved today. Giancarlo's intuition is more than ever guessed and, thanks to his training and experience, he manages to select high-level vineyards of Glera grapes, in the areas of the DOC Prosecco and DOCG Prosecco Valdobbiadene, giving life to labels of the highest quality and great elegance . Today, undoubtedly, the success of Prosecco Col de' Salici represents the victory of a challenge which, guided by passion and experience, has found the coveted and deserved success.
