The Spagnol family extends within the territory of the DOCG Prosecco Superiore Conegliano Valdobbiadene, a family that has been involved in viticulture since the beginning of the twentieth century and that since 1986 has started making sparkling wine, bottling and offering the fruits of its work. Over the years Col del Sas has become a true symbol for the production of quality Prosecco, with a wide range of wines at its disposal, the result of the tradition and passion that this family has for the territory and the nature that surrounds them . The winery can boast over thirty hectares of vineyards that extend over the slopes of the surrounding hills and in some of the most prestigious municipalities of the DOCG, among which the vineyard from which it takes its name certainly stands out, Col del Sas, located on the hill of the same name, a real Cru; in each of these plots the vines are treated as "if they were children", with respect for the environmental balance and the ecosystem in first place, to make the most of the fruit and what will then be the final product, reflecting the native land and its seasons. The vinification of the grapes takes place through the classic "white vinification", while the sparkling wine production follows the Charmat method procedure, reworked by the fervent minds of the Enological School of Conegliano into a method that involves the introduction of wine, sugar and yeasts selected, in autoclaves for a refermentation that will last at least thirty days. All winemaking takes place with the collaboration of the entire family, starting from the parents Orazio and Loreta, up to the children Marco, Alberto and Mattia. Although the name Prosecco can indicate a vast area of origin, being part of the Conegliano Valdobbiadene DOCG restricts this territory and best identifies the products with its own narrow specifications in order to make them unique and unforgettable.
