Description
The white wine Pecorino Colli Aprutini IGT from the Emidio Pepe winery can be considered one of the flagship products of this company which boasts a long tradition in the oenological field. In fact, no chemicals are used, even in the most difficult years and conditions. No selected yeasts to initiate alcoholic fermentation and no added enzymes to encourage the genesis of perfumes. Only natural products such as copper crystals, sulfur and biodynamic preparations are used, both in the vineyard and in the cellar. All this just to restore the place, the climate and the tradition through the distinctive personality of the vines of this area. It is produced using exclusively Pecorino grapes, grown on a clayey soil following the dictates of the company philosophy which, thanks to the experience of over half a century of its founder, allow to obtain an absolutely unique wine. The harvest is exclusively manual, selecting only the perfect grapes which are pressed with their feet still in a large wooden tub, 350 kg at a time are crushed for 40-45 minutes, allowing constant stimulation of the skin with the must, letting the skin releases matter, volume and aromas. This method allows the juice to be extracted in a delicate and soft way, without breaking the stalks, obtaining a flower must rich in elements useful for causing both alcoholic fermentation and the numerous virtuous effects that outline the wine's personality. Before bottling, no mechanical filtration is done and the wine is left to refine in the glass and decant its deposit naturally, which is therefore normal to find on the bottom of the bottle. Pecorino by Emidio Pepe is a wine with a unique personality, which gives the nose floral, herbaceous and yellow fruit notes. Full-bodied and mineral to the taste and with all its typicality.
