Description
Abissi Spumante Rosé Classic Method Pas Dosé is produced by the Ligurian winery Bisson , a winery that enhances the peculiarities of the local wines using innovative and original aging methods. This rosé sparkling wine is obtained from a blend of two local vines, Ciliegiolo and Granaccia, grown on the hills close to Chiavari. Once the manual harvest is complete, only the best bunches arrive in the cellar. Here the grapes are gently pressed and left to ferment in stainless steel tanks. As evoked by the suggestive name, the refinement takes place in the marine abyss, precisely at a depth of 60 meters in the marine park of Portofino. The second fermentation takes place in the bottle, according to the Champenoise or Classic Method, and after an initial rest of 8 months, the bottles are deposited inside special grates at the bottom of the sea for another 14 months. Abissi Spumante Rosé Classic Method Pas Dosé can be tasted with pleasure immediately, as well as after 2 or 3 years.
