Bourgorgne Epineuil L'Ame Des Dnots is one of the most interesting productions of the Dominique Gruhier winery. It is based in Epineuil, in Burgundy, and covers twenty-five hectares of land, where Chardonnay, Pinot Gris and Pinot Noir vines are grown using organic viticulture methods. Bourgogne Epineuil L'Ame Des Dnots is a wine 100% Pinot Noir, produced with particularly rich grapes, thanks to the concentration of limestone that characterizes the Epineuil soil. The harvest takes place between August and September, when the grapes have reached the peak of ripeness. Fermentation is carried out with the aid of local yeasts and with the so-called whole cluster method, whereby the grapes and stalks are not separated until the end of this phase.
