Description
Asili Barbaresco DOCG is a classy red that perfectly combines great elegance and refined structure with a pleasant drink. The Chiarlo Michele winery makes it from only Nebbiolo grapes, coming from the Asili cru, from which the bottle then takes its name. The vines are over 25 years old and are grown with a south-west exposure on soils rich in calcareous marl. The harvest takes place towards the end of September, rigorously with manual systems. Subsequently the grapes, in the rooms used, undergo the operations of destemming and pressing. At this point, the must obtained ferments in oak vats and is then transferred to medium-sized barrels for ageing. After about 18 months of aging Asili Barbaresco DOCG is bottled and is ready to be drunk. However, being a label which enjoys a remarkable longevity, it is advisable to let it evolve for a few more years in the cellar, to better appreciate all its characteristics.
