The immediate reference of the name of the winery is to the dark cassock of the French monk Dom Perignon, who lived towards the end of the 1400s and is considered by legend to be the Father of Champagne. Eugenio de Castel Terlago and the oenologist Luciano Lunelli (famous for having made Teroldego known throughout the world) in 1973 decided to join forces to give life to their dream, that is, to create an extraordinary sparkling wine, in a territory that was not certain at the time famous for wine, namely Trentino. Since that date, tiring and complicated roads have been followed, but research and constant commitment have rewarded the two friends: today the Abate Nero wines are considered, to all intents and purposes, a symbol of the territory in the world and have written one of the chapters most significant in the history of Italian bubbles produced with the Classic Method. The two friends had seen it well, over 40 years ago: the Abate Nero vineyards are located on particularly suitable and well exposed lands on the hills above the hamlets of Trento and Lavis, in an area where one can easily speak of "mountain viticulture" Chardonnay is the most cultivated grape among the company's vineyards, followed by some plots of Pinot Noir: they are certainly the two most representative vines in the Champagne region. Initially, the first processes of making the grapes sparkling wine took place in the ancient cellars of Palazzo Schulthaus in Lavis, right where the famous Giulio Ferrari produced the first sparkling wines, but in 1980 the production, as it grew, was transferred to Lamar di Gardolo. Abate Nero's Trento DOC sparkling wines are well structured and persistent, creamy and deep , with long refinements on the yeasts; they are bubbles that have won widespread acclaim from the public and critics, still maintaining today the timeless charm of an artisanal production, based on high quality and attention to detail, worthy representatives of the best Italian sparkling wine tradition in the world.
