Description

Sforzato della Valtellina Rainoldi is produced in the heart of Valtellina, between the municipalities of Castione Andevenno, Sondrio and Tresivio. It comes from Nebbiolo grapes, rigorously cured and harvested by hand, and owes its fruity aromatic characteristics to the type of processing, which involves drying the grapes in crates until winter. It is thanks to the dehydration of the bunches that a higher concentration of sugar is obtained, which gives the finished product an intense, full-bodied and complex aroma. The vinification of Sforzato della Valtellina Rainoldi involves a cryomaceration of about 60 hours, during which the skins, remaining in contact with the must, release all their fruity notes. This is followed by slow maceration at a scrupulously controlled temperature with constant mixing of the pomace, and subsequent maturation in oak barrels, where the product rests for up to 20 months. The refinement takes place instead in dark and cool cellars, in which the wine is left to age in the bottle for about a year before being put on the market.
