'Pietra dei Lupi' Castel del Monte Nero di Troia DOC Cantine Carpentiere 2019

The red Castel del Monte Nero di Troia DOC Pietra dei Lupi is one of the most important wines of Cantine Carpentiere. It takes its name from the horizontal stones placed on the walls surrounding the Jazzo, to defend against the attack of wolves. The Jazzo is a particular enclosure for sheep commonly used in the territory of the Murgia and Gargano (Apulia). The Cantine Carpentiere are located in the Alta Murgia National Park, at about 450 meters above sea level, and the vineyards are cultivated with care and entirely by hand. The soils of these hills are calcareous and stony, the climate is characterized by quite significant temperature changes between day and night, an important note for giving these grapes their characteristic aroma and flavour. The Castel del Monte Nero di Troia DOC Pietra dei Lupi is a wine with Denomination of Controlled Origin which is produced following the most traditional processing techniques. It is produced with 100% Nero di Troia grapes. It is aged in relatively small 7.5 hectolitre Slovenian oak barrels. The result is a very complex, intense, tannic but balanced wine, particularly suitable to be accompanied by important meat dishes.
