Chardonnay, a white grape of French origins, is the most famous of the so-called international vines, because it is capable of expressing its best in different territories, maintaining the characteristics that make it always recognizable. The processing of this wine is obsessive: after pressing in the absence of oxygen, only the best first fraction must is transferred for alcoholic fermentation into small oak barrels, obtained from selected woods and seasoned for at least 3 years. Here the wine remains on its lees for a further 9 months, during which it also undergoes malolactic fermentation. With the "batonnage" operation, repeated weekly, it reaches its maximum olfactory harmony and gustatory complexity. Subsequently, the different batches are blended and the wine is bottled by gravity, in a natural way. Thanks to innovative filling systems, the wine does not undergo oxidative shocks, concussions and further additions of sulphites. It was immediately a highly appreciated wine in the Italian wine scene which considers it one of the best chardonnays around. A wine with a bright colour, intense aroma, underlined by a touch of vanilla and a characteristic hint of hazelnut. With a full and round taste, it has an organoleptic structure so intense as to be comparable to that of a red wine, but which persists in the senses due to its extraordinary finesse. Great!
