Description

Sherry Pedro Ximénez Don Zoilo 12 Years Old is a fortified wine that best represents a prestigious winery such as Williams & Humbert, a real Spanish institution for the production of Sherry. It is obtained from the vinification of only grapes of the Pedro Ximénez vine, which after having reached perfect ripeness and an optimal sugar content, are left to dry in the sun for about fifteen days. Once the sugar concentration has been further increased, the grapes ferment inside oak barrels: the resulting must is then subjected to a double fortification. As per tradition, the cellar follows the Soleras method for refinement, which in the case of the Sherry Pedro Ximénez Don Zoilo 12 Years Old, lasts for twelve years. The result is a fortified wine with extremely varied sensory nuances. Perfect to be enjoyed as an aperitif, if served cold with a few ice cubes, but also excellent to drink neat to warm up a conversation after dinner.
