The primary objective of a winery with well over 200 years of history can only be to continue working in the wake of tradition, while innovating. And this is the objective of Luigi De Sanctis and his son Francesco who in the splendid hills around Frascati cultivate the typical varieties of the territory: Malvasia del Lazio, Malvasia di Candia, Trebbiano Toscano, Bombino and Cabernet Franc, a grape international which has now entered the local tradition. The estate is represented by approximately 10 hectares of vineyards which are cultivated according to organic farming methods. This is, in fact, the great innovation of De Sanctis' winemaking activity: combining modern agronomic and oenological technologies with respect for the environment and tradition. The results are certainly excellent, in fact the De Santis winery is considered among the most representative of the area for the quality and prestige of its wines. It should be underlined that the oldest vineyards are between 45 and 55 years old, therefore truly precious, and consequently reserved for the most prestigious labels. Each step, both in the vineyard and in the cellar, follows strict organic protocols, including the transport of the grapes to the cellar. Of particular note is the geothermal system with underground horizontal probes which, through the exchange of heat with the subsoil, significantly reduces CO2 emissions into the atmosphere, making the cellar a virtuous example of a structure with a truly low environmental impact. The overall result is in fact expressed by wines of high quality and great balance, as well as highly expressive of the territory of origin. We want to highlight, among others, the "496" Frascati Superiore, composed of Trebbiano and Malvasia, one of the labels from the De Sanctis winery that best expresses the traditions of the territory, in the name of typicality, but also of innovation, as it is a wine that absolutely does not see the addition of sulphites during its processing phases.
