The Arcese di Bera Vittorio e Figli comes to life in relatively distant times and comes from an assembly of native grapes of the Canelli area in Piedmont. This is a completely organic white, deriving from a selection of vines that are harvested without the aid of technological instruments or machinery. The additions of enzymes, yeasts or chemical treatments are absent. Coming from an area originating from the flaking of calcareous marls deriving from an accumulation of sediments with a marine composition, Arcese is made up of 40% Cortese grapes, 30% Sauvignon white grapes, 10% Arneis, 10% Vermentino and 10% of Favorita grapes. The harvest of this white is rigorously done by hand and the peculiarity that distinguishes it is a pressing process of the grapes that compose it, which, before reaching the press, are not subjected to any destemming procedure. This allows the naturalness of the grapes to be kept unaltered even during the creation of the wine which, in this specific case, comes from an ICEA certified method. This is followed by a final fermentation in stainless steel tanks and an aging on the lees of the same for a total of 9 months. Another curiosity: no clarification or filtration is foreseen before its final bottling.
