Description

The Chateau Simon Barsac Sauternes is an intense and very particular passito, made with modern techniques combined with a deep respect for tradition. Chateau Simon is also the name of the winery, founded by the Dufour family in the Barsac area and handed down over the years from generation to generation. The vineyards are cultivated in full respect of the environment, with cutting-edge organic methods. For the production of this valuable and unique wine Semillon grapes are mainly used, widespread throughout the French territory, with the addition of Sauvignon and Muscadelle vines. The harvest takes place by hand, in order to choose only the ripest bunches and attacked by the so-called noble rot: this is produced by the Botrytis cinerea fungus, which helps a natural concentration of sugars in the product. This is the real peculiarity of this type of wine, known throughout the world also with the name of Vino Muffato. In this way the Chateau Simon Barsac Sauternes takes on its own peculiar, rich and intriguing sensorial aspect. The wine in question, with an enveloping and harmonious body, is bottled after 18 months of aging in oak barrels. It releases intense notes of exotic fruit on the nose; in the mouth the flavor is persistent and round, full of richness. The right balance between sweet and sour makes it perfect to accompany a not too sweet dessert; in the same way, its marked personality does not make it look bad even in the face of structured and fatty foods such as blue cheeses and foie gras, a classic combination for this extraordinary passito.
