At the time of the establishment of the Selosse winery, after the Second World War, the production of champagne was historically in the hands of a few large maisons and the majority of small vignerons sold the grapes to them, rather than making the champagne into sparkling wine themselves. In fact , Domaine Jacques Selosse was created in 1949 by Jacques Selosse who only began making wine on his own in 1974, together with his son Anselme . In 1980, Anselme Selosse took over the management of the Domaine, supported by his wife Corinne: there are 8 hectares under cultivation, most of which are chardonnay in the municipalities of Avize , Cramant , Oger and Le Mensil Sur Oger , a pinot noir vineyard in Ay and one in Ambonnay , in the Montagne de Reims . These names are already sufficiently illustrative for an enthusiast to understand the absolute excellence of the grapes produced; we are in fact in the best Grand Crus of the entire region, where the greatest champagnes of all are produced. Anselme Selosse initially started with the idea of applying the biodidamic philosophy in the vineyard and in the cellar, therefore an extremely natural production; he distances himself from it over time, and then manages to find his own balance in the management of the maison which requires minimal intervention, both in the vineyard and in the cellar, based on practices of Burgundian origin, such as fermentation in barrique , the use of yeasts only indigenous, the bâtonnage during the refinement phase and the addition of minimal doses of sulfur dioxide and liqueur d'expédition. According to Anselme Selosse, the role of the producer is not to standardize the taste of the wine produced, but to enhance and tell the story of the terroir of origin. For this reason, Selosse champagnes are now revered by enthusiasts, who are willing to spend any amount just to have a few precious bottles of Selosse in their cellar.
