I Pastini

“I Pàstini” is a young company, but with solid traditions behind it and a strong passion for the recovery of local vines; was born in 1996 and is located in the heart of the Itria Valley, also known as "the valley of the trulli, we are in Puglia naturally, and more precisely between the municipalities of Locorotondo and Martina Franca. Rediscovering and enhancing the ancient wine-growing traditions of the area, but with the help of modern oenological techniques, the production is truly interesting: quality wines are therefore offered that express the new face of local viticulture. It is curious to remember that the vineyards are located on hilly territories with heights up to 430 meters above sea level , contrary to what one might imagine. Managed by the Carparelli family, the estate has a vineyard area of 12 hectares and the following are cultivated: Verdeca, Bianco d'Alessano and Minutolo, all white grape varieties which confirm the ancient viticultural vocation of the area for white wines. The name of the company evokes Pastinum, which in Latin was properly the "hoe" and, derivatively, "land intended for the vine". Thus the hoe modeled the "cacalupo", the small dam of land necessary to collect the long-awaited and always rare rainwater, today as then.
The valley benefits from constant ventilation from the north, which mitigates the hot summer temperatures, guaranteeing a balanced diurnal temperature range, such as to allow the excellent quality of the grapes.
The mass selection, carried out in an impeccable manner by highly qualified personnel within the native varieties of the Itria Valley, together with the particularly favorable pedo-climatic conditions, thus allow us to vinify unique white grapes which express their exclusivity in the organoleptic characteristics of wines, produced with the pride of the most authentic tradition. The initiative launched by the company is interesting, namely the adoption of vineyards, carried out for the development of sustainable tourism, aimed at enhancing the history, peasant traditions and wine culture of the Itria Valley. Adopting a vineyard is a way to become "virtual" growers and allows you to witness the birth of a unique product like wine. The winery launched the slogan: from YOUR vineyard, YOUR wine on YOUR table.
