This splendid and ancient construction was born around the year 1000, when the Canons of the Cathedral of Siena decided to found a new abbey and chose a very panoramic hill in a large oak forest, not far from the city. Thus Canonica a Cerreto was born, as was its suggestive cellar: over the centuries it has remained intact, testimony to the importance that wine has always had in these parts. The same Bishops who owned and lived in Canonica a Cerreto, for three hundred years, changed only what was indispensable. Today the estate extends over an area of 60 hectares, of which twenty are intended for vineyards, a dozen for olive groves and the rest left for centuries-old forest, in order to promote the biodiversity of the natural ecosystem. Inside the estate there is also a charming farmhouse, located in the historic building of the old rectory. The climate is decidedly favorable for the cultivation of vines, as evidenced by the centuries-old production of Chianti, therefore with mild and sunny winters, an area that is always very ventilated and with notable temperature variations between day and night, which guarantee a gradual maturation of the grapes that develop , therefore, very interesting aromatic profiles. The soils are of calcareous-clayey origin and have always been very suitable for the cultivation of red grape varieties. As for the vines grown on the estate, in addition to the native Sangiovese, the vineyards host the "international" Cabernet Sauvignon and Merlot. The harvest is always done manually, in order to select only the perfectly ripe bunches. In 2003, the Lorenzi family started the construction of a new, more efficient cellar, both in the part dedicated to winemaking and in that intended for the refinement and aging of the wines produced. The Canonica a Cerreto labels are only 3 and therefore highly representative of the territory: Chianti Classico and a Chianti Riserva, flanked by a Super Tuscan, the San Diavolo, an interesting blend of Sangiovese, Cabernet and Merlot.
