Description
Il Matidia Cesanese Lazio IGT, prodotto dalla Cantina Casale del Giglio è un vino rosso monovitigno. I vigneti di uva Cesanese sono situati sui Colli Albani, nelle vicinanze di Olevano Romano, a 500 metri di altitudine, su terreni vulcanici con venature calcaree. Dopo la vendemmia, che solitamente viene effettuata nella seconda metà del mese di ottobre, i grappoli di uva cesanese vengono sottoposti a macerazione a freddo per circa sette giorni ad una temperatura di 8° C, seguita da una fermentazione a temperatura controllata in serbatoi d'acciaio inox. L'imbottigliamento avviene 12 mesi dopo la maturazione che si effettua sia in vasche d'acciaio che in tonneaux. Il Matidia Cesanese Lazio IGT è un vino di pronta beva, caratterizzato da un gusto fresco, persistente e profondo, e molto sapido; può essere degustato con soddisfazione anche dopo una corretta conservazione fino a 4 anni in cantina, grazie alla sua buona longevità.
