Description
The Novecento Chianti Classico Riserva DOCG from the Dievole winery is a Tuscan red wine born to celebrate its 900 years of history. It is obtained from 100% Sangiovese grapes coming from vines located at an altitude between 300 and 420 meters above sea level with south, south-west exposure; the soils are silty-clayey with high stoniness and the presence of limestone and marl. The winemaking process is characterized by a spontaneous fermentation, through the use of indigenous yeasts, in Slavonian oak vats, at a controlled temperature for about fifteen days. The malolactic fermentation is followed by refinement for eighteen months in non-toasted French oak barrels and a further refinement in the bottle for at least six months. The Novecento Chianti Classico Riserva DOCG is a ready-to-drink wine, but which can evolve well if left to rest in the cellar for even four or five years and more.
