Description
Phos Aglianico in Anfora Roccamonfina IGT is a full-bodied red wine produced by the I Cacciagalli winery, which stands out for an original concept of viticulture. It is obtained from the vinification of grapes of the native Aglianico vine, grown on sandy and calcareous soils, rich in minerals and nutrients that ensure a luxuriant development of the vine. The volcanic origin of the Roccamonfina terroir, where the vineyards are located, gives the grapes a complex profile. When the time comes for the harvest, the bunches are selected and picked by hand. As regards the winemaking processes, the company rediscovers the ancestral method of fermentation in amphorae, with a long contact maceration on the skins. Refinement then takes place in the same amphora in which the grapes were placed to ferment. Filtration operations are not carried out before bottling. Phos Aglianico in Anfora Roccamonfina IGT can be enjoyed immediately, or left to evolve for at least 3-4 years during careful storage in the cellar.
