Description
Serapias "Passito di Pantelleria DOC Mandrarossa" is a wine with a high alcohol content and undoubted quality, made by the homonymous Mandrarossa winery. Made with 100% pure Zibibbo grapes, one of the truest expressions of the Sicilian territory and the island of Pantelleria. The bunches come from different districts located right on the small island, where the vines are trained as saplings. The sandy soil, which is naturally influenced by its volcanic origins, accompanies the Mediterranean climate of Sicily, creating the ideal conditions for the development of high quality grapes. Normally the Zibibbo grapes are harvested at the end of August and, once selected, a part of them is left to dry for about 3 weeks. The fresh grapes are instead destemmed in a gentle way and, at the end of the withering of the berries, the must is integrated with the remaining part. The alcoholic fermentation takes place in stainless steel tanks and then the refinement can start in steel silos for 10 months, and another 3 months in the bottle. Serapias "Passito di Pantelleria DOC Mandrarossa" has a good alcohol content and a strong minerality, which derives from the volcanic origins of the Pantelleria soils. In the mouth it is full and round, with mineral and sweet flavours. The taste has a hint of flint. The finish is long and extremely persistent. It goes perfectly with almond or ricotta-based desserts and spicy cheeses and is the most sublime conclusion of a perfect banquet.
