This Sauvignon comes from the homonymous grapes, grown by the Manincor winery on the Lieben Aich estate in Terlano. The vineyards, located about 380 meters above sea level, have their roots in a sandy-porphyritic soil of volcanic origin. The grapes, once harvested and taken to the premises used for vinification, are de-stemmed and then macerated for 12 hours; the fermentation takes place spontaneously, thanks to the presence of indigenous yeasts, in oak barrels. Still in wood, the wine ages for about 9 months, remaining on the fine lees until bottling. The result is a white with character, structure, body, certainly long-lived. Persistent, but elegant, perfect with combinations of a certain type such as grilled fish. Excellent.
