Manincor is one of the oldest wineries in Alto Adige and is spread over approximately 50 hectares of vineyard land, around seven farms that can enjoy different exposures, ideal for creating a wide range of quality products. Manincor boasts a tradition dating back over 400 years in the Caldaro area, one of the most fascinating and suitable areas in all of Trentino Alto Adige. In fact, it was born in 1608 at the hands of Hieronymus Manincor who received, for his merits in favor of Austria, some hectares of land right around Lake Caldaro. Since then the Manincor property has passed through various owners, until 1978 when it was purchased by the Enzenberg counts, a family that still owns the cellar today, in the figure of Michael Goëss-Enzenberg. Until the 1990s Manincor only sold its own grapes, and it was Michael who decided to reverse course, starting to produce and sell his own labels. Identify the most suitable areas, among the various vineyards, i.e. real Crus: Mazzon, Panholzer and Manincor for the reds, where Pinot Noir, Lagrein Merlot and Cabernet Sauvignon find the ideal conditions for the best growth and Lieben Aich and Leiten which instead, they are the terroirs where the white grapes, based on Moscato Giallo and Sauvignon, produce the best.
The operations in the vineyard are carried out with the aim of making natural wines, which respect the natural cycles of the vine. Precisely for this reason, the principles of organic and biodynamic agriculture are followed, protecting, first and foremost, the surrounding biodiversity. Likewise, in the cellar, the interventions are limited to naturally accompanying the grapes in their transformation process. Each vineyard is vinified separately, the fermentations are spontaneous and take place thanks to the use of natural yeasts; Racking and bottling are carried out following the rhythm of the lunar phases. For the refinement and aging phase, wooden barrels are used that come directly from the oak trees in the woods surrounding the Manincor estate. Natural wines, a true expression of the territory, which however do not give up the finesse and elegance that distinguishes South Tyrolean products.
