'Aeroplanservaj' Barolo DOCG of the Municipality of Serralunga Domenico Clerico 2019

The Aeroplanservaj Barolo DOCG red wine from the Domenico Clerico winery is one of its flagship labels. "Aeroplan Servaj" (Wild Airplane) is the name of the latest Cru of Barolo that Domenico Clerico created in homage to his father Clemente, who used to nickname him in this way, to indicate "a child, a boy and finally a man who flies with the imagination on the hills that surround it and lands, sometimes, for a few seconds to be part of the real world". The highly prized Nebbiolo vineyards are located in the heart of the Baudana Cru, in Serralunga d'Alba, where the particular combination of very fertile soils and optimal climatic conditions allow for perfect ripening of the grapes. To produce the Aeroplanservaj Barolo DOCG wine, a specific production cycle is followed, starting from the harvest, during which a very careful selection of the bunches takes place. Immediately after fermentation, there is a prolonged period of maturation in small oak barrels (barriques), about 2 years, and subsequently refinement in the bottle. In this way, an extraordinary wine is obtained, robust and well structured, perhaps a little rough at the beginning, endowed with great body and with excellent drinkability which lends itself to being aged for many years where it will evolve to the fullest, smoothing out the vivid tannins and demonstrating an elegance and finesse worthy of the greatest Barolos around.
