The Armentario Castel del Monte Nero di Troia Riserva DOCG wine is a red of considerable interest, produced by the historic Apulian company Cantine Carpentiere, a reality that, by combining tradition and innovation, produces "thick" terroir wines. This label, which preserves the ancient values of the Apulian peasant world and takes shape from the vinification of 100% Nero di Troia grapes, the fruit of vineyards grown on pebbly and calcareous soils, at 450 meters above sea level. This autochthonous vine has enormous potential that has only recently been highlighted and valued; until recently it was used as a classic blending wine, like most wines from Puglia and southern Italy. The Armentario Castel del Monte Nero di Troia Riserva DOCG comes from a harvest done by hand in the last week of October. After harvesting, the grapes are transported to the cellar, where they undergo a long fermentation in steel on native yeasts. Subsequently, the wine is aged for 2 years in Slavonian oak barrels, then it is bottled and a further 1 year maturation in glass follows. The product is a red with great intensity and excellent persistence. An austere label, for a wine with a savory and full-bodied sip, perfect to be paired with important meat dishes. The structure and tannins give it a decidedly important longevity perspective. Great wine.
