Description
Chardonnay Alto Adige DOC is a fresh and fragrant white wine produced by the Tyrolean winery Kellerei St.Pauls . This label is obtained exclusively from the vinification of Chardonnay grapes, an international variety which expresses itself excellently in the shade of the Dolomite peaks. On the clayey lands, rich in calcareous and moraine sediments, the vines find the ideal environment to thrive. The bunches come from two vineyards, located respectively in Riva di Sotto and San Paolo at an average of 300 meters above sea level. Once the perfect degree of ripeness has been reached, the grapes are selected and harvested manually. In the cellar, the vinification begins with destemming and proceeds with a slow alcoholic fermentation in large stainless steel tanks, where the wine also remains for the subsequent short refinement. Chardonnay Alto Adige DOC can be appreciated as soon as it is bottled or after 2-3 years of careful storage in the cellar.
