Among the wines produced by the Le Salette winery there is also the characteristic and famous Progni Valpolicella Ripasso Classico Superiore DOC which comes from a blend of 70% Corvina and Corvinone vines and 30% Rondinella and Oseleta. The name derives from the Progni, a stream that passes through the vineyard, and from the particular method of vinification, that of the ripasso, according to which a first fermentation is carried out in October and a second one in January or February on the pomace of dried grapes , used for the production of Amarone. It is a full-bodied and intense red wine, aged for 18 months in oak barrels and barriques. The nose reveals attractive notes of blackcurrant, red fruit, spices. On the palate it is soft, with smooth tannins, complex, rich and enveloping, intense and persistent. In short, the antechamber of Amarone (from which it comes), without making you regret it in the slightest.
